Since I am cooking this for myself tonight (DH is not fond of fried chicken so I don't usually cook it but tonight I am going to the effort for myself!!), I thought I would post my grandmother's recipe for fried chicken. I am going to serve it with cream potatoes, gravy, and biscuits (not homemade b/c of the time involved but really good frozen biscuits).
I soak mine in sour milk overnight in the fridge. You want the skillet to be half full of grease and almost smoking hot. Then mix 1 egg with some sweet milk in a bowl. In another bowl mix salt, pepper, and flour. Dip the chicken in the milk/egg mix, roll in the flour, back in the milk/egg mix, back in the flour. Then put in the hot grease (carefully!! it will pop and smoke!). Once the bottom side is golden brown (this takes a minute or less) turn the chicken over. After about a minute (more or less depending on how long it takes the other side to become a golden brown), turn the fire down to low and cover the pan. Cook for about 45 minutes (maybe more depending how the chicken looks when you cut into a piece).
