This summer has been busy. Jess is leaving Sunday for college at Clarendon. Nana and Melissa are going with her to get her settled into her dorm room. I have been crying all year and this is going to hit me hard. I know she's not my child (Will) and I know this is a great opportunity for her to play volleyball (Nana) but it's still a day away. And when I see her, I don't see the gorgeous talented, awesome young lady she has become. I see the little girl just learning to walk. I see the ponytailed girl racing her Nana to the mailbox on her tricycle. I see the little one who was so short her legs stuck straight out on the horse. I see the first goat show where she won Junior Showmanship (and I have the pictures from that too!!!). I see the little girl jumping on the trampoline and getting me to jump with her. Sigh.
Okay, now onto things that make me cry for different reasons. We planted a garden this year and I have been busy!!
Pepper Sauce, 2 quarts and 1 pint. Do you know how many little peppers it takes to fill a jar?!?!
My canner on the stove. I have cooked 2 batches of greens in it (greens to the top, water, boil till done). I now have 5 quarts of greens in the freezer plus the ones we ate and still have some leftovers in the fridge. Whew!
I started the last batch of peas in my corn pot but it was lipping brimming full and had no room for the peas to boil. So I brought out my trusty canner again. This was batch 2. Batch 1 was last Thursday and we ended up with what we ate and 3 quarts in the freezer. Batch 2 was yesterday and I ended up with 4 butter bowls, 1 HUGE Cool Whip bowl, 2 quart and a half Glad containers, and 1 quart in the freezer. Plus some in the fridge and what we ate. I cook my peas until they are done then I freeze them. That way all I have to do is thaw and heat, no cooking required when I am in a rush.
Now I have a gallon of jalapeno peppers in the fridge and twice that many to pick. Making jalapeno bread and butter pickles for Will. Plus the squash that just keeps coming!!
